As spring and summer approach, I find myself falling back on all of my picnic recipes. My family loves to be outdoors, so easy throw-together meals are essential for this time of year. That being said, I would like to share with you one of my favorite picnic recipes: Devilled Egg Salad! It's so good and can be eaten as is, on a leaf of lettuce, or my personal favorite: on freshly baked sourdough sandwich bread. It goes without saying, Eggs Benedict is a dish we all know and love! I can tell you that anytime I see it on a restaurant menu, I'm ordering it, without a doubt. It's one of my absolute favorite breakfast meals! However, serving it can be a bit tricky, especially when you have a larger family. So I thought I would share a casserole version with ya'll! As we settle into these cooler months, I wanted to bring you a recipe that enveloped all things fall! When I think of fall meals, I think warm, wholesome, and filling. So this month's recipe is one that may not be very common (and actually one I forget about quite often!), but is the perfect dish to serve during colder months that utilizes our favorite ingredient: Fresh Eggs! And that is quiche. I love quiche because you can honestly just throw in whatever you have on hand and it works! When you're a farmer, you often have early mornings, which can make eating a nutritious breakfast difficult to manage. Oftentimes Bruce will find himself skipping breakfast because he's so rushed to get out the door in the morning! So, in order to solve that, and ensure my husband has a good meal before a hard day's work, these freezer breakfast burritos are the perfect solution! They are super simple to assemble, and freeze well for many future meals. And when you love burritos as much as Bruce does, it's pretty much guaranteed he won't skip his breakfast during those early mornings!

I know what you're thinking, "Blueberry jam with eggs?". That's the thought I had as I scanned the drive-through menu at a little roadside breakfast joint in Fairbanks, Alaska. Eggs and tacos. Not sure why we haven’t had this combo sooner! In this recipe, I used breakfast sausage for the protein, and added my favorite taco toppings! But the best thing about tacos, is that you can personalize them to your hearts content. I also made a homemade taco sauce that really sets this dish apart from your average taco. So go crazy with the toppings that make your taste buds happy!
