Eggs Benedict Casserole
It goes without saying, Eggs Benedict is a dish we all know and love! I can tell you that anytime I see it on a restaurant menu, I'm ordering it, without a doubt. It's one of my absolute favorite breakfast meals! However, serving it can be a bit tricky, especially when you have a larger family. So I thought I would share a casserole version with ya'll! You still get those delicious flavors, but it's a lot less time consuming. Coming from a mom of almost three small children, that's always a win in my book! I hope you enjoy!

Ingredients

  • (18) Large Fresh Eggs
  • (12) English Muffins, torn into pieces
  • (8 tbs) Grass-fed butter
  • (12 oz. package) Seven Sons Sugar Free Pork Bacon
  • (1 1/2 cups) Milk
  • (1 1/2 cups) Heavy Cream
  • (2 tsp) Salt
  • (1 tsp) Garlic Powder
  • (2 tsp) Ground Black Pepper
  • (1 tsp) Paprika

Directions

Here's What You Do:

  1. Preheat your oven to 375 degrees and grease a 9x13 baking dish. 
  2. Cube with a knife or rip up the English muffins into small pieces, and distribute evenly in the baking dish, followed by cubed butter and cooked bacon. Set aside. 
  3. Meanwhile, in a large bowl (can use a stand mixer if desired), mix together eggs, milk, heavy cream, salt, pepper and garlic powder until fully incorporated. Pour the eggs mixture over the English muffins, covering completely. 
  4. Cover dish and bake for 30 minutes. Uncover, sprinkle paprika on top and bake uncovered for an additional 30 minutes, or until centre is set and lightly browned. 
  5. To make the hollandaise sauce, in a medium stainless steel bowl or double boiler, combine 8 egg yolks, 3 tablespoons of lemon juice, and 2 tablespoons of water. Place the bowl over a pot of simmering water (ensuring that the bowl does not touch the water) and whisk until mixture thickens and doubles in volume. Slowly add in 3 sticks of melted butter while continuing to whisk. The sauce will continue to thicken. Add in a pinch cayenne pepper and ground black pepper to taste. 
  6. Remove the casserole from the oven and pour half of the hollandaise sauce over top, leaving the rest for individual use. Garnish with paprika and parsley if desired. Serve right away and enjoy!
