Ingredients
- Fresh Egg Co Dozen
- (1 cup) Milk
- (1/2 cup, more for garnish) Feta Cheese
- (1/2 cup, chopped) Onion
- (1/4 cup, chopped) Tomatoes
- (1/2 cup, chopped) Bell Pepper
- (1/2 cup) Frozen Spinach
- (1 cups, cubed) Bread
- (1lb) Breakfast Sausage
- (1 tsp) Black Pepper
- (1 tsp) Salt
- (1/2 tsp) Smoked Paprika
Directions
1) Preheat the oven to 375. Bring a skillet to medium heat and brown the breakfast sausage.
2) Slice the onion, tomatoes, and bell pepper, and cube the bread.
3) Combine the eggs, milk, feta cheese, and seasonings in a large bowl and mix well. Toss in the vegetables.
4) In a baking dish, line the bottom with the breakfast sausage, then the bread. Pour the egg mixture over top and give it a light stir.
5) Bake for about 40 minutes or until center is set. Cool before serving.
