Balsamic Asparagus and Burrata With A Fried Egg

Bruce and I make it a rule to go out on a date night once a month! We often frequent this little place in our hometown, one of our favorite spots. While scanning the menu on one of our dates, a dish caught my eye, and though I had already decided to order what I order every time we go (haha), I told myself that I needed to make it at home. So here we are, a couple of months later, and I am sharing with you that very dish. I hope it catches your eye, just as it did mine! It is a lighter dish, but so very tasty. Maybe you can work it into your next date night!

Ingredients
- (1 lb) Asparagus
- (8oz (you will need two "balls")) Burrata Cheese
- (2 eggs) Fresh Egg Co Dozen
- (2-4 tbs) Balsamic Vinegar or Glaze
- (2 tbs) Grassfed Butter
- (1 tsp) Salt
- (1 tsp) Ground Black Pepper
- (2 tsp) Garlic Powder
Directions
- Bring a pan to medium to low heat and melt the butter. Add the asparagus and cook until fork-tender. Season with salt, pepper, and garlic powder.
- Cook the eggs as desired - I prefer sunny side up, but a soft-boiled egg would be yummy as well. Season with salt and pepper.
- Plate the asparagus, then the burrata cheese on top - I like to cut open the burrata so it spills over the asparagus. Top with the runny egg, and finally, drizzle some balsamic vinegar.
