Egg Skillet Over Toasted Garlic Naan

While I love a heavenly piece of toasted bread, english muffin or bagel with my eggs, I decided to incorporate naan as a substitute for this recipe. The aroma of warm naan and hint of garlic pairs wonderfully with the eggs, feta and bacon.

Ingredients
- (1 dozen) Fresh Co Eggs
- (1/2 cup) Onion, chopped
- (1/2 cup) Heavy Cream
- (1 cup) Feta Cheese, crumbled
- (1 12 oz. package) Seven Sons Pork Bacon (Sugar-free)
- (To taste) Sour Cream (optional)
- (To taste) Salsa (optional)
- (1 package) Garlic NaaN Bread
- (2 TBSP) Seven Sons Salted 100% Grassfed Butter
Directions
- Preheat your oven to 350 degrees.
- Saute the chopped onion in 1 TBSP of melted grassfed butter over medium heat for 4-5 minutes or until onion is clear in color and tender.
- While that's cooking, whisk together all the eggs with the heavy cream.
- When the onion has finished cooking, add the egg-cream mixture to the skillet and cook to your preferred level of doneness.
- Toast the Naan in the oven for 10 minutes either directly on your oven rack or on a baking sheet.
- Once everything is ready, top the toasted naan bread melted butter and your cooked egg mixture and add salsa, bacon, feta cheese and/or sour cream if you like.
Note: The Pork Bacon was cooked up crispy before I started to simply prep for this meal.
