Easy Ham And Gouda Egg Bites
As our little family counts down the days until we meet our third little one, we look for simplicity anywhere we can find it, especially when it comes to meal times. These little egg bites are so simple and so delicious! What's more, you very well may already have the few ingredients you need to make them up in a jiffy! You can substitute essentially any protein, vegetable, and cheese that will satisfy your family's taste buds. Also try adding in a cup of cottage cheese for extra protein! I hope you enjoy!

Ingredients

  • Fresh Egg Co Dozen
  • (2 TBS) Heavy Cream
  • (5 OZ) Shredded Gouda Cheese
  • (1/4 Cup) Fresh Chopped Chives
  • (1 Cup) Diced Ham
  • (1 TSP) Garlic Powder
  • (1 TSP) Onion Powder
  • (1/2 TSP) Paprika
  • (1 TBS) Salt
  • (1 TSP) Ground Black Pepper

Directions

  1. Preheat oven to 375 degrees and prepare a 12 count muffin tin by coating it with a non-stick spray or by using liners. 
  2. Combine the eggs, heavy cream, and seasonings in a mixing bowl and mix until well combined. Then stir in the diced ham, chopped chives and grated cheese. 
  3. Pour the egg mixture evenly into each muffin tin and place into the oven. Bake for 20-25 minutes or until golden brown. Let cool before serving. 
  4. Store in the refrigerator for up to 3 days or place in a freezer safe container or baggy and store for up to a month.
