Blueberry Bagel Breakfast Sandwich

I know what you're thinking, "Blueberry jam with eggs?". That's the thought I had as I scanned the drive-through menu at a little roadside breakfast joint in Fairbanks, Alaska. I wasn't sure about it at first, but I figured that if we came all the way to Alaska, might as well try new things. And boy, am I glad that I did! That breakfast bagel lives on in my dreams. It was so good, I wanted to share it with you all! From the sweetness of the jam, to the saltiness of the egg, to the nutty-ness of the arugula, this combination of flavors will live on in your dreams, too, guaranteed!

Ingredients
- (1-2) Large Fresh Egg
- (1-2) Everything Bagel
- (4-8 Slices) Sliced Turkey
- (2-4 TBS) Cream Cheese
- (2-4 TBS) Blueberry Jam
- (Handful of) Arugula
- (2 TBS) Butter
- (To taste) Salt
- (To taste) Black Pepper
Directions
The wonderful thing about this recipe is that beyond frying up the eggs, it really comes down to simply assembling. Super easy!
- Bring a frying pan to medium heat, and melt butter. Crack in the eggs and fry until they reach over-easy perfection. Season to taste. CLICK HERE to learn how I make the perfect over-easy egg.
- While your eggs are cooking, slice your bagel of choice - I used an everything bagel in this recipe. Slip the bagel slices in the toaster (optional).
- On the bottom half of the bagel, spread the cream cheese. On the top half, spread the blueberry jam. Add the slices of turkey, then the arugula, and finally the egg.
