Easy Breakfast Tacos

Eggs and tacos. Not sure why we haven’t had this combo sooner! In this recipe, I used breakfast sausage for the protein, and added my favorite taco toppings! But the best thing about tacos, is that you can personalize them to your hearts content. I also made a homemade taco sauce that really sets this dish apart from your average taco. So go crazy with the toppings that make your taste buds happy!

Ingredients
- (2-6) Fresh Eggs
- (1lb) Seven Sons Breakfast Sausage
- (1-2) Green Onion
- (1-2 cup) Sweet Corn
- (1-2 cup) Black Beans
- (1 cup) Crumbled Feta Cheese
- (2tbs) Mayonnaise
- (1tbs) Honey
- (1tsp) Sriracha Sauce
- (1stp) Chili Powder
- (1/2tsp) Garlic Powder
- (1/2tsp) Onion Powder
- (1tbs) Lime Juice
- (1tsp) Water
- (12oz package) Tostadas
Directions
- Bring a pan to medium high heat and cook the meat. In this recipe, I used breakfast sausage, but ground beef, chicken, or even bacon would do nicely.
- While the meat is cooking, prepare any vegetables and toppings. The only chopping I had to do for this recipe was a green onion, so super simple.
- Make the best homemade taco sauce by combining mayonnaise, sriracha sauce, honey, chili powder, garlic powder, onion powder, lime juice, and a bit of water. Stir to combine well. Of course, this is totally optional and you can just use regular ole taco sauce.
- Once the meat is cooked and the toppings are prepared, fry your eggs.
- Assemble your taco just how you like it and enjoy!
